Robust Italian Chicken Sausage Fettuccine Carbonara

- Prepare fettuccine according to package directions. Reserve 1/4 cup of the pasta cooking water.
- In a large saute pan, heat olive oil over medium heat and saute Chicken Sausage until browned. Turn off heat and set aside.
- Mix eggs, cheese, and parsley in a bowl. Add the Chicken Sausage, then pour over the cooked pasta, tossing gently with tongs and using reserved pasta water to thin sauce.
- Return to very low heat for 1-2 minutes or until slightly thickened. Serve.
