Mezze Pizza Pita with Traditional Hummus
Crisp, Mediterranean veggies and creamy feta cheese crumbles are layered on a bed of smooth hummus and crispy pita for a dish that satisfies any time of day.
- Turn the broiler on at 500ºF and place pita on a baking sheet.
- Drizzle olive oil over each pita, sprinkle lightly with oregano, then broil for 2-3 minutes, just until the oil begins to crisp the pita.
- Remove from the oven, then carefully and evenly spread hummus over each toasted pita.
- Dress with red onion, tomatoes, olives and feta cheese. Garnish with freshly chopped parsley.
- Slice and serve.
